Each individual berry has been incredible on its own in different Endless Meads in the past, but the combination is divine. Ginger, the synesthete, really captured the Mead with this label art, all the berries make an appearance when you taste it, but just as soon as you identify it, it melds into the next berry, folding in on itself with waves of vanilla.
Raspberries would have brought enough acid for the other three berries, but there would be too much flavor overlap with Blackberry and Boysenberry, so the Black Currants made a much better foundation. Then the Blueberries bring their own profile that perfectly compliments all the other berries and smooths it all out.
Finally, and arguably the most important component, the honey! Blackberry Blossom Honey is one of the very rare times the honey has flavors of the fruit, it’s wonderfully fruity with notes of Tupelo and caramel.
While one of the most messy, and expensive treatments, due to the fact that we actually use real cream cheese…the cheesecake meads are quickly becoming a signature style of ours. The velvety silky mouthfeel the “milk/fat washing” imparts is just heavenly.
Plus, we doubled the amount of Madgasgar Vanilla Beans we normally use!
This mead is THICK and RICH, if the previous Cheesecakes have been elegant, this one is decadent, making it the perfect “cake” to celebrate the end of YEAR:02!
