For a bitter monk it was surprisingly sour and not that bitter. I can see other people have enjoyed this beer a lot, but it’s not for me.

Bottled 2018 (maybe 2019), drank 2025. The bitter did not mellow over time. The citrus and hops did decreased greatly. Low carbonation as expected. And a bit of sediment on side of bottle. There are moments of lighter bitterness and are very pleasurable
