Fade is a version of the Raspberry Prestige recipe that was aged in Used Barrels with a light dose of Madagascar Vanilla beans. With a slightly quicker finish than other raspberry meads we've made due to the additional drying nature of the oak presence, a slight note of creamy vanilla ties the final lingering notes back together. Tucked away in the profile is a bit of char, chocolate and nuttiness from the moderate aging time. Read Less

Heavily toasted macadamia nuts meet maple syrup from a small maple farm out of New York. With a similar approach for nut additions as we used for Cellar Reserve #001, we ultimately experience a jammy raspberry backbone in this mead. However, as the palate acclimates to the initial fruit acidity, the flavors shift more towards what is best described as “rancio”. Earthy, savory, umami, black truffle, nutty, toast, and brown butter flavors is what prompts us to use just this single descriptor to encapsulate the range of flavors.

This is one that begs for time to breath. Given the fruit choice as the anchor, this product will continue to evolve and expand throughout the course of an evening or with continued time in the bottle. Read Less

Obscure is our Blueberry Mead with Vanilla aged in a used barrel from our friends at Toppling Goliath. Much like "Fade", this mead uses a lighter touch of Vanilla to help lend a creaminess to the body. It also serves to accentuate the chocolate-like notes from the barrel's previous life. This mead finishes with a slightly tannic and more drying finish, with bursts of blueberry, vanilla, chocolate, tobacco, and toasted nut. Read Less

Banana Pancake Prestige is the newest version of our meads aged in special store pick barrels. This particular batch of Banana Pancake was paired up with a store pick Jack Daniels barrel from Aman's. Jack Daniels, known for providing banana aromatics and flavors, seemed like a perfect pairing for this iteration of Banana Pancake. Aged for 8 months in the barrel, this batch is bigger all around than previous iterations of this mead. Besides just a much longer period of time in the barrel, this batch saw various other adjustments in the recipe to help further differentiate it from batches before. A shift to a dark robust maple from Vermont, along with a touch more cinnamon worked in all help to pop the flavors against the extended age time. Read Less
